Peruvian cuisine and Nikkei cuisine, one of the branches that fuse Peruvian and Japanese cuisine, have experienced a global boom. Cooking from the Amazon jungle, however, whose territory represents two-thirds of the country, is just beginning to receive the attention it deserves.
We have worked for many years with indigenous communities, made many trips to the Amazon to discover ingredients, and launched many projects to help revalue the region's gastronomic culture. The foods of the Amazon rainforest and its biodiversity offer a vast range of gastronomic possibilities for Peru and the world.
